Caprese Pasta Salad

Serves: 4 Prep Time: 15 minutes Cooking Time: 8 minutes

A refreshingly simple yet sensational summer salad.

Ingredients

  • 12 oz (375 g) spaghetti
  • BERTOLLI Extra Virgin Olive Oil Spray
  • 3 tbsp (45 mL) white balsamic vinegar
  • 1 clove garlic, minced
  • 2 cups (500 mL) grape tomatoes, halved
  • 1 pkg (226 g) GALBANI Mozzarella Fresca, cubed
  • 1/2 cup (125 mL) packed fresh basil leaves
  • Salt and freshly ground pepper, to taste

Preparation

  1. Cook spaghetti in a large pot of boiling salted water for about 8 minutes or until tender but firm. Drain and rinse under cold water. Drain excess water and place in a large bowl.
  2. Spray pasta generously with olive oil spray. Add vinegar and garlic. Toss to mix thoroughly, adding more olive oil to taste.
  3. Add tomatoes and mozzarella. Mix well.
  4. Add basil, salt and pepper. Toss and serve immediately
