glazed chocolate pecan brownies

Serves: 4 Prep Time: 10 minutes

Ingredients

  • 2/3 Cup of Bertolli Delicato Extra Light Tasting Olive Oil
  • 1 Cup of sugar
  • 1/4 Cup of water
  • 4 Cups of semi-sweet chocolate morsels
  • 1 Tablespoon of vanilla extract
  • 1/2 Teaspoon of baking soda
  • 1 1/2 Cups of all-purpose flour
  • 1/2 Teaspoon of salt
  • large eggs
  • 1 Cup of toasted, chopped pecans (if desired)

Directions

  1. Combine sugar, Bertolli Delicato Extra Light Tasting Olive Oil and water in a large saucepan. Cook over medium-high heat until sugar dissolves.
  2. Add 2 cups of the chocolate morsels & vanilla extract; stir until smooth. Let chocolate mixture cool for 15 minutes. Preheat oven to 350°F.
  3. Add flour, baking soda & salt to cooled chocolate mixture. Stir in eggs; add pecans if desired.
  4. Spread brownie batter into a lightly oiled & floured 9” x 13” baking pan.
  5. Bake at 350°F for 25 minutes or until toothpick inserted in the centre comes out clean.
  6. Sprinkle remaining 2 cups of chocolate morsels evenly over warm brownies. Let stand 5 minutes to soften and then spread over brownies. Cool brownies completely on wire rack.
