Tomato Soup

10' Easy 12345

4 Tomatoes on the vine
3 Grilled red bell peppers in oil
1 Shallot
100 ml Extra Virgin Olive Oil
40 ml Sherry vinegar
1 Clove of garlic
10 Basil leaves
Salt and pepper to taste

Preparation

Step 1

Cut a small cross on the bottom of the tomatoes and submerge in boiling water for 30 seconds.

Step 2

Let tomatoes cool in ice water for 30 seconds, then remove skins.

Step 3

Place all the ingredients in a blender and blend until the mixture is smooth. Add mixture to large pot and heat, stirring frequently.

Step 4

Cut several slices of bread, brush with a bit of olive oil and grill.
