Avocado, Lime Oil and Poached Egg

For the avocado:
2 Avocados
Salt to taste
Pepper to taste
For the lime olive oil:
100ml Bertolli EVOO
Zest of 2 limes
4 Eggs
Step 1
For the avocado:
Peel and cut the avocados into square chunks.
Step 2
Season them with salt and pepper, add a few drops of lime juice and set aside.
Step 3
For the lime oil:
Pour the EVOO into a saucepan and grate the lime peel into the EVOO. Cook on low heat for 10 minutes.
Step 4
For the eggs:
Place a pot of water on the stove to boil. Meanwhile, line a ramekin with plastic wrap. Crack each egg into the plastic.
Step 5
Gather the 4 corners of the plastic wrap together so that the cracked egg is in the centre. Close and twist tightly (repeat this process with all 4 eggs).
Step 6
Poach the eggs for 5 minutes and remove from the water.
